一雞四味 One Chicken, Four Flavours
英國超市的雞肉份量挺大的,我家只有兩個人,每次買一盒雞胸、雞髀、雞翼,同一部位的雞肉便要重複吃多餐,所以我喜歡買全雞,一雞幾味,令菜色口味較多元。早前Tesco的全雞做特價,用£4買了一隻,做了四個菜。
In British supermarkets, chicken portions tend to be larger than those in Hong Kong. We only have a family of four. When we buy a pack of chicken breasts, thighs or wings, we would end up having to eat the same part of the chicken for multiple meals. That’s why I prefer to buy whole chicken and make different dishes with different parts of the chicken to offer greater variety of flavours in our meals. Earlier on, whole chickens were sold at a special price of £4 at Tesco. We bought one and made four different dishes.
雞胸:蘋果茴香烤雞胸,配以螺絲粉、炒雜菜做晚餐。
Chicken Breasts: I made a Roast Chicken Breast with Apple and Fennel, and served it with fusilli pasta and stir-fried mixed vegetables for dinner.
雞髀:白切雞,配以蒜茸炒豆苗做晚餐。當然還有一大碟我們最愛的薑茸!
Chicken thighs: My husband made Cantonese Poached Chicken, served with Stir-fried Pea Shoots with Garlic for dinner. Of course, there was also a big plate of our beloved Ginger and Scallion Sauce!
雞翼:香茅雞翼,午餐用來配蝦子麵吃。
Chicken wings: I made Lemongrass Chicken Wings to go with Shrimp Noodles for lunch.
雞架:淮山杞子煲雞湯,吃了兩餐。煲湯的雞肉吃得不多,用雞架最合適!
Chicken carcass: I used it to make a Soup with Chinese Yam and Goji Berries, which lasted for two meals. The carcass is perfect for making soup since it’s the chicken flavour we’re going for instead of the meat in the soup.
一雞幾味的做法,除了帶來多種風味的美食,更能好好充分利用食材。我很喜歡這種創意的挑戰,用一隻雞創造出無數驚喜,所以樂此不疲!(同場加映:《一雞六吃》)
Using a chicken this way only brings a variety of tasteful dishes but also fully utlises food ingredients. I really enjoy such creative challenge of using one chicken to create numerous surprises, so I never tire of it!
