Trifle:可口的英式甜品 Trifle: A Yummy British Dessert

  多年前在英國認識了trifle這道甜品,在香港只在Marks & Spencer有售。我嘗試自己動手做,慢慢配搭出一個更合自己口味的版本。

  有次一位曾在英國留學的朋友來我家吃飯,我做了一盆trifle,一看到便興奮地叫起來:「很久沒吃過trifle了!」然後滿足地品嚐這份久違的英倫美味。另一次,我帶了一盆 trifle 到朋友家聚餐,席間有位從英國來的客人,說沒想到來到香港,竟能吃到由香港人親手製作的英式甜品,還笑說要比較我做的,和他祖母做的哪個更好吃。最後,他認為我的版本足以媲美他祖母的食譜。

  移民來英國後,我依然喜歡自己做 trifle。雖然這裏到處都買得到,但自家製的,總是最合口味。每逢朋友來我家開大食會,我幾乎都會做一盆——做法簡單、味道討好,男女老幼都喜歡。更意想不到的是,每次吃完,總會有人向我索取食譜。

  既然如此,不如把食譜記錄在這裏,方便日後與人分享。以下所有材料,在英國或香港都能輕易買到(在英國超市,啫喱糖通常放在烘焙材料或罐頭生果的貨架)。你也可以按個人口味改用其他水果。這個食譜沒有寫明份量,因為真的非常隨意;如想有個概念,可以參考我拍的影片(不好意思,拍得比較粗糙)。  

  I first came across trifle many years ago while staying in the UK. In Hong Kong, I only saw it available at Marks & Spencer. Then I started making it myself, adjusting the flavours to my own taste.

  One time, a friend who had studied in the UK came over for dinner. I made a large bowl of trifle, and the moment he saw it, he exclaimed, “I haven’t had trifle in years!”. Then he happily enjoyed a mouthful of this long-missed British dessert. On another occasion, I brought a trifle to a friend’s gathering. Among the guests was someone visiting from the UK, who said he never expected to eat an British dessert made by a Hong Kong person. He then joked about comparing mine with his grandmother’s. In the end, he decided mine was just as good as hers.

  After migrating to the UK, I still keep making trifle at home. Although it’s widely available here, homemade always tastes best. Whenever I host a big gathering, I almost always make a trifle—it’s easy to prepare, pleasing, and enjoyed equally by adults and children. Quite unexpectedly, everytime somewone would ask me for the recipe.

  So here it is, written down for easy sharing. All the ingredients listed below are easy to find in both the UK and Hong Kong (jelly sweets are usually stocked near baking supplies or canned fruit in UK supermarkets). You can also substitute the fruits according to your own preference. I haven’t specified quantities, as this is a very flexible recipe. If you’d like a rough idea, you can refer to the video I filmed (apologies—it was shot quite casually).

材料

  海綿蛋糕 Sponge Cake

  冧酒(或些厘酒)(如果不能喝酒可改用果汁)

  士多啤梨(切片)

  藍莓

  香蕉(切片)

  啫喱糖(切粒)

  雲尼拿吉士醬

  鮮忌廉 (自己打或買現成唧忌廉均可)

Ingredients

Sponge Cake
Rum (or Sherry; fruit juice can be used as a non-alcoholic substitute)
Strawberries (sliced)
Blueberries
Bananas (sliced)
Jelly canides (diced)
Vanilla Custard
Whipped Cream (homemade or ready-made one)

做法

1. 在大碗底部鋪一層海綿蛋糕,加入冧酒(或果汁),份量只需足夠把蛋糕浸濕即可。

2. 倒入一層雲尼拿吉士醬,加入士多啤梨、藍莓和啫喱糖,再倒一層雲尼拿吉士醬蓋過水果和啫喱糖。(喜歡的話可以重複,多做一層。)
3. 舖上一層香蕉,最後加上一層鮮忌廉。
4. 按喜好以水果作最後裝飾即可。

Method

  1. Line the bottom of a large serving bowl with a layer of sponge cake. Pour over rum (or fruit juice), using just enough to moisten the cake.
  2. Add a layer of vanilla custard, followed by strawberries, blueberries, and jelly candies. Pour another layer of custard over the fruit and jelly. (You can repeat this to create extra layers if you like.)
  3. Add a layer of sliced banana, then finish with a generous layer of whipped cream on top.
  4. Decorate with extra fruit if desired.
