吃剩的烤雞再美味 Leftover Roast Chicken, Delicious All Over Again

  聖誕節我們通常不吃火雞,而是吃烤雞。吃剩的烤雞可以毫不浪費,用來做三文治,或煮一鍋雞肉雜菜湯,既實際又美味!

  At Christmas, we usually have roast chicken instead of turkey. Any leftover roast chicken goes to good use—made into sandwiches or turned into a pot of chicken and vegetable soup. Practical, unfussy, and genuinely delicious.

雞肉三文治 Chicken Sandwich

  把雞肉撕碎,勻,加入少許黑胡椒調味,鋪在已塗上牛油的方包上,即可享用。

  Shred the chicken and mix it with mayonnaise and a little black pepper. Spread butter on slices of white bread, add the chicken mixture, and it’s ready to serve.

雞肉雜菜湯Chicken and Vegetable Soup (一個很好「吃」的湯 a yummy and filling soup)

  1. 把烤雞的骨架連同洋蔥(切半)、西芹兩條(切段)、甘筍半個(切件)、月桂葉一片,加水煮滾後轉小火,煮45分鐘。完成後隔去湯料,留下上湯。
  2. 另起鑊,用少許油炒香剁碎的甘筍、西芹和洋蔥(亦可加入其他你喜愛的蔬菜),加入步驟(1)的上湯,再放入撕碎的雞肉,以及兩片切碎的鼠尾草。煮滾後即可上桌。
  1. Put the roast chicken carcass into a pot with one onion (halved), two sticks of celery (cut into chunks), half a carrot (cut into pieces), and one bay leaf. Add water, bring to a boil, then simmer gently for about 45 minutes. Strain the stock and discard the solids.
  2. Heat a little oil in a pan and sauté finely chopped carrot, celery, and onion (you may add any other vegetables you like). Pour in the stock from step (1), then add the shredded chicken and two finely chopped sage leaves. Bring to a boil, and the soup is ready.

做人要有衣食。節日吃剩的烤雞,可別白白丟掉——換個做法,又是一頓溫暖又踏實的滋味。

Don’t be wasteful. When there’s leftover roast chicken from the holidays, don’t throw it away—give it a second life on the table.
